The Best Travel Babbles: 2011 Edition

January 2011

I finally opened up about what I like to call "Hockey Season-al Depression". I made Chicken and Dumpling Soup and Teriyaki Chicken Skewers from scratch. I found a roundtrip flight from Germany to Massachusetts for under 500 euro, flew home, and my Momma met me at the airport with a giant Dunkin Donut's Iced Coffee :)

February 2011

I tried on wedding gowns for the first time! I completed my first blog design. TJ and I finally went to check out the Hannover City Hall. We ran out of essentials about 4 weeks before the season ended. 
March 2011

Brutus turned two. TJ wrote his first Guest Post. And a bottle of wine wrote a Guest Post, too. I shared packing tips and tricks and figured out all of the paperwork needed to bring your dog back from Germany to the US. It was very bittersweet to leave Germany.

April 2011

My Paypal account was hacked! Teej and I finally went to see our wedding venue. I worked way too many hours - April was boooring.

May 2011

I received a really nice e-mail from a girl who wanted advice about her hockey playing boyfriend. I kind of felt like Dr. Phil. Have you heard of The Mayonnaise Jar Experiment? I published one of my favorite motivational and inspirational blog posts. I also put my crazy pants on and let everyone know that I Google My Fiance.

I announced my retirement from hockey. I wrote a now interesting post about Golden Opportunities. This One's For The Girl's is the perfect girly pick-me-up for a troubling day. TJ signed in Texas 7 days after I announced my retirement. Lot's. Of Engagement. Photos. were on the blog.

I shared my healthy eating tips. I loved putting together this Handmade Holiday Guide. Meltdown #1 of hockey season #5 occurred. Brutus blogged about his first time at daycare. I was hired for an awesome virtual travel agent position and shared about 20 different companies I've found that hire work from home. I decided to stop blogging.

December 2011

December was really boring on my blog but not in real life. I took a lot of time to visualize what I want in life and decided I'm auditioning for the DCC in May. I probably gained 82 pounds eating all of this yummy holidaze food!


Isn't it wild to reflect on the past 365 days? I mentioned in a post earlier this month that the days feel long but the years feel short. Can you believe that one year has already come and gone? What a beautiful and eye opening reminder to savor and appreciate every day as it comes in the new year. 

2011 was such a wonderful year to me, full of growth and change. I have so much to look forward to in the next year of my life and I'm excited to see what's in store!

Foods Of The Holidaze


Mint Milano Cookies, dipped in chocolate and sprinkled with crushed candy cane


Pretzel Rods dipped in chocolate and sprinkled with crushed candy cane

Deviled eggs. I mix my yolks with a little mayo, yellow mustard and dijon mustard. Delish!

You can never go wrong with cheese and pepperoni!

Five Layer Turkey Taco Dip

Ingredients:
8oz Cream Cheese
1 Taco Seasoning Packet
12oz Sour Cream
15oz Hormel Turkey Chili
8oz Salsa
Mexican Taco Sprinkle Cheese
Sliced Black Olives

Directions:
1. Combine cream cheese and taco seasoning, spread it into a 10x10 dish
2. Spread sour cream on top of the cream cheese/taco seasoning mixture
3. Pour and spread chili as the third layer
4. Pour and spread salsa as the forth layer
5. Sprinkle Mexican cheese as the fifth layer

Bake at 350 for 30 minutes
Sprinkle immediately with black olives
Served best with Scoops :)

TJ came home around 2pm on Christmas Eve Day after being on a 6 day roadtrip, and that kicked off our "last Christmas before we're married" celebration. We feasted like a King and Queen on Christmas Eve over a game of Monopoly, then we enjoyed a wonderful Christmas Day brunch coupled with Elf, Home Alone, phone calls, and Skyping back home to our families.

The last few days have been a wonderful overindulgence of food and wine (calories don't count from December 23rd to December 28th in my book) but I am definitely happy this time only comes once a year and I can't wait for my food baby to go away!!

Dreams Are Just Dreams When They're Stuck Inside Your Head.

While I've been happily traveling with TJ for the past 5 hockey seasons, this year was different right from the start. Instead of 'traveling', it quickly began to feel like I was simply.....drifting. 

I've always joked that we are a "packaged deal". Where he goes, I go.

But playing hockey is his thing. While it was fun for the past 5 years...here I am at almost 26 years old and I frequently ask myself - "Who am I?"

Let's see...I'm a fiance, I'm a daughter, I'm a sister, I'm a fur-mama, umm, I'm a blogger? 

But what makes me, me
What am I made up of? 
What do I want to do with my own life? 
What is important to me?

When you live for and follow someone else's dream, it's inevitable that you come up short on answering those questions. You find it almost impossible to define yourself. I shake inside when someone says, "So, tell me about yourself."

Reflecting on the past 4 years of my life, the days were long but the years were short. 

It became too easy to make excuses for myself, to convince myself that there were certain things that I couldn't see or be or do because of the "What If's"

"What if he gets that offer in Europe?"
"What if he doesn't get an offer at all?"
"What if he gets traded?"
"What if he has a career ending injury?"

But my life isn't a spectator sport like hockey is, and it's time to become an active participant in my own destiny. It's time to make a change before I allow another 4 years to go by. There is no simpler way to explain that change than by saying this: I'm focusing on me.

I've been making a conscious effort for the past few weeks to focus on myself in positive ways. What has this resulted in? My firm belief in Karma, and lots of big, exciting changes in my life to share.

It's true: What you send out into this world really is returned to you.

In addition to currently going through an extensive six week training program for my new career as a virtual travel agent, I'm so happy to announce that I also signed a one year contract to stay here in Texas for another job. I was flown in to Denver, CO last week to train for my Pure Barre Instructor certification, which I will continue to study and train for throughout the end of January. TJ and I mutually discussed and decided that if someone was willing to invest the time, trust and money in to me and my talents, then that is an opportunity that I simply could not let pass me by. 

Additionally, since I'm staying here in Dallas/Fort Worth - and the opportunity is knocking louder than ever - I've made the individual and now public commitment to audition for the Dallas Cowboys Cheerleaders in May. I know that many of you may think it's a ridiculous thing to aspire to be a cheerleader in life, but I whole heartedly consider being chosen as a DCC one of the highest honors that I could ever receive.

Why?

Because five years ago, if someone asked me to tell them about myself, I would have immediately began with:
"I'm a dancer..." 

The  word 'dancer' and all that it signifies sums up everything that I aspired to be before I allowed this hockey world to consume me: poised, elegant, athletic, graceful, hardworking, dedicated, ambitious, skilled, disciplined, devoted, passionate.  I lived and breathed dance, my college degree is in Dance. When TJ met me I was dancing professionally and choreographing Nationally award winning pieces. It mind boggles me that I was able to walk away from something that I lived for and everything that defined me...but love makes you do silly things :)

I'm excited and ready to invest my heart and soul into both the physical and emotional aspects of training for auditions, to present the best me that I can be, and to know who I am and exactly what I have to offer if I make it into the interview round.

So, what happens if TJ doesn't re-sign here next year? I honestly haven't given it much thought. I'm at a point in my life where I think it is very important to focus on putting myself first, and there is no shame in that. I trust that we'll figure it out together if and when we have to think about it.

And what happens to Travel Babbles? Well, I haven't figured that out quite yet. It makes me sad that I no longer need this blog the way that I use to, but it also makes me very happy that I don't longer need it like I use to. I'm still in the process of figuring out the road that Travel Babbles will take in 2012, and I thank you for sticking by me :)

And Then I Decided To Stop Blogging.

I laid in bed last night and declared to TJ that I was going to stop blogging. 

"I mean really, whats the point? I have so many more important things in my life to be focusing on right now than publishing blog posts."

I frequently receive e-mails from people asking what I do, and what they can do to make their blogs grow. Many people don't understand the investment of time and creativity that goes into maintaing a blog. Trust me when I tell you that "followers" don't just stumble upon your blog and stay. I have invested hours, days, literally months of exhausting work into Travel Babbles, and for what? While I do make money off of this blog, I promise you that the work involved is not worth the paycheck.

I didn't begin Travel Babbles a year ago with the intention of writing for an audience. I began writing for myself and for my family. While the success of this blog over the past year has been humbling, it has also been very stressful. I have put a lot of pressure on myself, every single day, to be a "good" blogger, and what this has resulted in is me no longer writing for myself, but writing to please others.

What use to be a very fun and creative hobby for me now just feels like work.

I was about 99% set in my ways to close up shop today until...

TJ reminded me that I truly do love my blog. And I've put so much work into it. And some of my very best friends are people that I've met through blogging.

He made me realize that it's not so important to get a post out every day at a certain time. And I don't need to blog 5 days a week. And I don't need to sit on the computer 5-8 hours every day writing, editing and networking. And how I truly do love and appreciate the relationships that have been formed because of Travel Babbles. And how flattered I am when someone takes the time to write to me expressing their gratitude for a certain post that I've published where I invested my entire heart into my writing.

He reminded me of, you know...the important things. Thank you, Thomas J.

So, I've decided to stop blogging every day. 

And throughout December I'm going to check in just once a week with updates. I need to reorganize my priorities and remember why I started this blog in the first place. Recently I have felt like some of my posts are not coming from my organic self, and this is clearly reflected when I do not receive feedback on such posts. Why publish posts if no one wants to read what you have to say? My most read and commented on posts are the ones where I let my soul shine through and where my readers can relate to what I have to say - I need to get back to that.

I hope that before the start of the New Year I will regain my balance in blogging, grasp the creative spark that I once enjoyed feeling while maintaining Travel Babbles, and start producing quality content that reflects ME once again.

Brutus Blogs | My First Day At Doggy Daycamp

Mom and Dad had some errands to run yesterday and instead of leaving me at home to sleep they decided to drop me off at my first day of PetSmart Doggy Daycamp so that I could play and meet some new friends.

I was very intimidated when I first walked in the door - no one likes to be the new kid!


Luckily everyone was very nice and there was a trained employee in the room with us who remembered all of our names. She would call on us if we were acting too rowdy and tell us to calm down.

Guess what? I got to play with another English Bulldog named Polo! He was a great guy and I hope he comes back next Monday so that we can play together again. It's tough for me to find friends in our apartment complex because I am so much bigger than the small breed dogs but so much shorter than the large breed dogs - sometimes it's complicated being 14 inches tall and 84 pounds!


The best part for Mom and Dad is that they could have left me there to play with my friends for up to 6 hours for only $12 bucks, but they were definitely a couple of softies on my first day and picked me up after only 3 hours because they missed me.

Even though I was having so much fun, I was very happy to see my parents at the door when they came to pick me up. As soon as I saw them I ran right to the door with a big smile on my face, and I was ready to go home.


Mom said since I had a star shining Pawgress Report that I can go back next week. Yippie!

Healthy Eating | My Tips To Getting Started

Let me let you in on a little secret: I enjoyed a homemade BBQ chicken garlic bread pizza, three glasses of wine and a homemade chocolate chip cookie last night. With vanilla frosting. And sprinkles. 

I didn't enjoy my meal simply because it probably could have put me in a carb and sugar coma, rather I enjoyed it because it was a reward - a reward for making clean, conscious and healthy food choices during the week. 

I do follow a meal plan Monday through Friday. Today looks like this:

Meal 1: 3 egg omelet with veggies and cheese
Meal 2: Green apple with organic peanut butter
Meal 3: Turkey burger, sweet potato, green bean and broccoli salad 
Meal 4: 5 pieces of asparagus wrapped in peppered turkey breast
Meal 5: Whatever I make for TJ (grilled chicken), substituting pasta for extra greens
Meal 6: Sugar free protein pudding

On Saturdays and Sundays I usually follow up until Meal 4 and then I leave it open, based on the activities we have planned for the weekend. Hockey games, girls night out, or simply sitting on the couch with a can of Pringles...

...Hey, I'm not perfect.

And you're not perfect, but that's what makes us beautiful. 


The following "rules" are ones I follow. I'm not a nutritionist by any means - but most of these are lessons I have learned from my trainer, Miss Katie Boyd, as well as by just listening to my body and being aware of how it reacts to certain foods.

1. Eat your limited dairy products and fruits in the morning. Vitamin D is important - but the steroids from cows? Not so much. Go Organic if you can. If I consume dairy after 6PM I have nightmares, so just imagine what it's doing inside my body. In regards to sugar: Your body cannot differentiate between a green apple and a green apple martini. Sugar is sugar when it's broken down to it's simplest form, so allow your body the entire day to burn it off by consuming your sugars early in the day instead of later in the afternoon. I suggest no sugar, ie., FRUIT after 2PM.

2. I don't eat red meat. It's a personal choice really, because it skeeves me out. The hormones, the steroids, and the digestion process of red meat is absolutely disgusting. You can Google the pros, cons, and processes of red meat and you may never go back. Plus, it's questionable if red meat attributes to heart disease and breast cancer. You will receive enough protein from turkey, chicken and fish, and if you're feeding a family, just make the switch. I've converted TJ, oftentimes without him even knowing, by replacing ground beef with ground turkey and chicken. He happily enjoys turkey tacos, chicken chili, turkey meatloaf, etc. along with me.

3. Plan your meals ahead of time. If you're on the go, invest in plastic containers and keep your meals ready-to-go with you. Pop them in your purse and you'll never be in a jam. Make sure to eat every 2-3 hours so that your insulin levels do not spike. This spike is just setting you up to make an unhealthy, normally carb and sugar-based decision if you aren't prepared with a protein-packed, nutritious meal. Remember: Sugar = Fat.

4. Water and tea are your friends. Oftentimes when you think you are hungry, you are actually just dehydrated. Unless it's been over 3 hours since you've last eaten a small meal, drink a large glass of water and then find something to occupy yourself for 5 minutes like doing a quick cleaning of one room in your home or writing a short email to a friend. I promise your "hunger" will be gone. Green and Ginger teas are my personal favorites because both are filled with antioxidants, they detoxify your skin, there is evidence that both teas fight cancer cells, they both reduce your stress which could curb stress-induced overeating, and they also boost your metabolism which leads to weight loss. 

5. It's human nature to snack, so why feel bad about doing it? I eat 6 times a day and three of those "meals" are snack based. The beauty in snacking is that you have the choice to make a good decision or a bad decision. My favorite snacks include: Hummus and green veggies, green apples and peanut butter, edamame and fruit, greek yogurt with fresh berries, celery sticks and peanut butter, and lettuce leaves filled with turkey and a dash of dijon.

I am obsessed with the clean simplicity of the color white. The dream home I envision in my head has white walls, white throw rugs, plush white couches and many, many, many glass elements. This is clearly going to stay a dream in my head because the probability of me having a bulldog and babies in an all white house full of glass is in the negative on a scale of 0 to 10.

I guess I will just have to stick to white canvas wall art. 

The "technique" I used to make my white canvas wall art was quite simple - hot glue letters on to the white canvas and then spray paint away. For those of you who have been following my blog for a while and know that we move every 8 and 4 months, this quote means a lot to me and makes my heart happy.

The First Step

Do you want to know how many steps it is from the door of my apartment to the door of our community fitness center? Of course you do.

Sixty seven. 67. Siebenundsechzig. Sesenta y siete.

And for those of you who are wondering - yes, I counted each step....and those last two words above are how you say sixty seven in Deutsch and Spanish. Ya know, in case you're ever on 'Are You Smarter Than A Fifth Grader?' or something. You're welcome.

As I was counting the steps out the other day it occurred to me that I am no longer allowed to concoct a single excuse as to why I can't walk those 67 steps into the 24 hour fitness center at least four to five times a week. And then I realized how lucky I am to have the legs to walk to the gym that's so accessible to me. It was actually sort of humbling.

So how does this epiphany of mine apply to you? Because at the end of the day, it doesn't matter how you do it, as long as you take The First Step. I know that a lot of people don't have the easy accessibility of an exercise facility within walking distance, but there are plenty of other steps you can take to start living a healthier and more active lifestyle. 

And now, you can check back in every Monday for a new tip or trick that will provide you with some motivation to start your week on the right track of making more conscious decisions in regards to your health, fitness, and overall well being.

I myself am definitely guilty of exceeding the suggested serving size of an ice cream scoop of pasta, a computer mouse sized potato and a dental floss sized piece of chocolate! This handy and easy to remember chart will certainly be in the back of my mind this week as I prepare and serve meals.

Sending a Smile | USPS Style

When we live in a world where it takes less than one minute to shoot over an email, type a text message, leave a voicemail or write a Facebook message, it's truly something special to receive a hand written letter in the mail.


Take a lead by the example from my 9 year old brother. As you can see, a hand written letter doesn't have to say much - just enough to make someones day, put a smile on their face, and maybe even a happy tear in their eye.

The 4 Year Foxiversary.

What a lame title, right? 

Yesterday was our 4 year anniversary and we celebrated it with a yummy sushi dinner. 
Laughing over silly memories and taking ridiculous photos followed. I said a while ago that I wanted to start sharing more personal pictures here to make my blog a bit more....uh, personal? Trust me when I say these are the best out of the impromptu shoot yesterday. But this is us, bloggy friends. Day in and day out. Til death do us part ;) 
We followed up dinner by coming home, laughing on the floor with Brutus about what a terrorist devil dog he was in our first apartment that he wasn't allowed in, and ended the night with the Jersey Shore Finale + Reunion. Pure romantical bliss? Obviously.

Caramel Apple Cheesecake Dip



WOW!! This dip is DELICIOUS and was a huge hit at girls night. You absolutely must give this a try for your next get together. There is just something about caramel + apples that screams fall (and "GET IN MY BELLY!"). Even if I'm still enjoying 85 degree weather here in Texas, my New England ways are certainly shining through; all I've wanted to do lately is bake apple pies and carve pumpkins.  What is your favorite fall activity?

I've adapted the recipe from The Half Baked Baker with some minor changes, mainly because we don't have a springform, and also because I was not about to make my own caramel sauce. Bite me.

Ingredients:
12 oz whipped (or not) cream cheese
3 tbs. heavy cream
1/4 cup powdered sugar
1/2 tsp. vanilla

Caramel pieces (or store bought)
Health candy pieces
Mini chocolate chip pieces
4 apples sliced + soaked in lemon juice

Directions:
1. Mix cream cheese, heavy cream, powdered sugar and vanilla until smooth
2. Spoon half of the mixture onto a serving plate
3. Melt down caramel
4. Pour melted caramel over plated mixture
5. Sprinkle with Heath and chocolate pieces
6. Place in refrigerator for 20 minutes
7. Spoon remaining cream cheese mixture over first layer
8. Cover that layer with melted caramel
9. Sprinkle with Heath and chocolate pieces
10. Arrange sliced apples around cream cheese mixture and ENJOY!
