The Tastiest and Easiest Chicken & Dumpling Soup

Teej and I weren't feeling too well a couple of weeks back and I was determined to make some chicken soup from scratch. Homemade chicken soup instantly reminds me of my Meme who always seems to have it whipped up at the first sign of a winters sniffle.

Chicken & Dumpling Soup

Ingredients
2 cups flour
1 teaspoon salt
1 packet instant yeast
3/4 cup cold water
Chicken seasoning
400 grams chicken
6 cups of water
5 teaspoons of chicken stock
4 carrots
2 celery stalks
1 small onion
2 cloves of garlic
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon garlic salt

Start by preparing the chicken and letting it marinate in a bowl with the chicken seasoning.
Brathähnchen Gewürzsalz = chicken seasoning
Continue by making your dumpling dough. Mix together the flour, salt and instant yeast and slowly add in your cold water. 
Hefe = Yeast
Knead the dough for five minutes, form into a ball and let rest.
Dice up your carrots, celery, onion and mince fresh garlic.
In a large pot combine the water, chicken stock, chicken, diced carrots, diced celery, minced garlic, basil, oregano and garlic salt. Heat uncovered on medium for 45 minutes. 
Hühner Kraftbouillon = chicken boullion. I don't know how the Imports Wives functioned here before the internet and Google Translate
After the 45 minutes are through drop the heat to low and roll out your dumpling dough. Cut the dough into bite size pieces and drop the pieces into the broth. As the pieces finish cooking they will rise to the top.
I actually surprised myself with how delicious and easy the chicken and dumpling soup was - it will definitely be my "go-to" recipe for years to come. Let me know if you give it a try this week!

  5. Looks good....I think I will have to try that, as I actually just bought yeast today. I never seem to have it in my house. I used to love going to the grocery stores in Europe when I was a flight attendant...just to browse (and buy cool Pringles flavors...curry!!) I never thought about trying to shop for a recipe!!
