Tasty Tuesday! Teriyaki Chicken and Pineapple Skewers

TJ thinks I'm wicked funny for bringing the camera into the kitchen ... but I keep telling him that one day Martha or Rachel may be calling me for an assistant chef position, and I'll definitely be needing a portfolio of my work.

Teriyaki Chicken and Pineapple Skewers

Ingredients:
3 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
400 grams boneless chicken chunks
desired amount of fresh pineapple chunks
skewers


Directions:
1. Combine soy sauce, brown sugar, ginger, garlic powder and black pepper in a bowl.
2. Add chicken and let marinate in the refrigerator for 1-2 hours
3. Preheat broiler to 250C
4. Alternately thread chicken and pineapple chunks onto skewers
5. Place skewers on top rack, broil for 4 minutes
6. Flip skewers and broil for another 4 minutes
7. Serve immediately (over rice and broccoli is my favorite!), and enjoy :)
