Cupcakes & Sangria

Is anyone else still on holiday mode, or is it just me?

Here's what I've been up to the past couple of weeks:
(aka, a whole lot of nothing special to report)

1.) Getting my artsy fartsy on
2.) Raspberry Lemonade Cupcakes
3.) Slow but steady wins the race. My time is improving though, yay!
4.) Marylou's Coffee = amazing.
5.) Our first anniversary ♡
6.) $5 shorts from Walmart. Me so fancy.
7.) A quick weekend getaway to Cape Cod with mi amigas
8.) Strawberry Lemonade Sangria = dangerously delicious
9.) Yes.

Raspberry Lemonade Cupcakes
Raspberry Cupcake Ingredients:
1 Box Betty Crocker Super Moist Lemon Cake Mix
1 3oz Box Raspberry Jello
1 cup water
1/2 cup coconut oil (or vegetable oil)
3 eggs

Raspberry Cupcake Directions:
Heat oven to 350F for shiny metal or glass, 325F for dark or nonstick
Place cupcake liners in pan
Combine Lemon Cake mix and Raspberry Jello mix in a large bowl
Add water, oil, and eggs to dry mix. Beat on low for about three minutes
Pour batter into cupcake liners (I used a 1/3 cup measuring cup to fill)
Bake for 15-20 minutes
Let cool, then frost with Lemon Cream Cheese frosting

Lemon Cream Cheese Frosting Ingredients:
1 stick of butter, softened
1 8oz package of cream cheese, softened
1 tablespoon vanilla extract
2 cups confectioners sugar
Zest from 1 lemon
Juice from 1 lemon

Lemon Cream Cheese Frosting Directions:
Cream together butter and cream cheese
Add vanilla, mix well
Slowly add in confectioners sugar
Add lemon zest and juice, mix well
Transfer to pastry bag (or, I used a plastic baggy) and decorate cooled cupcakes

Strawberry Lemonade Sangria
Strawberry Lemonade Sangria Ingredients:
2 large bottles of sweet white wine (I used Barefoot Moscato)
1 quart lemonade
8oz triple sec
2 sliced lemons
24oz frozen strawberries
1 liter seltzer water (I used Polar Lemon flavor)

Strawberry Lemonade Sangria Directions:
Combine moscato, lemonade and triple sec in large container/beverage dispenser. Stir well
Add sliced lemons and frozen strawberries
Let "marinate" for a minimum of 4 hours
Right before serving, add the seltzer water for a bubbly pop
(p.s. - don't be afraid to chow down on the strawberries, they are my favorite part!)

He was probably relieved your blogger friend who could actually really be some weirdo psycho stalker killer didn't show up to ruin the moment ;)
